Simple Coconut Rice

I obviously enjoy coconut. I am always open to using it in as many ways as I can. When I first heard of using it in rice I was all for giving it a try. I have to say I have tried a few different takes on it with various results. When using coconut milk in lieu of water I found at times it made the rice too sticky. I finally decided to try something I thought would work better. It turned out great and is the simplest recipe ever. If you want to impress your guests with minimal effort this can be our little secret :).

Ingredients

  • 1 cup Jasmine Rice (these are measurements from my pkg of rice)

  • 1 1/2 cup water

  • 1 Tbs Raw sugar (or regular sugar)

  • 1/2 tsp Olive Oil

  • 1/2 cup Coconut Flakes (I used sweetened)

Directions

  • Follow directions on rice package (sub sugar for salt)
  • Toast coconut in a DRY pan on medium heat, stir constantly
  • Toss coconut in with rice
