I obviously enjoy coconut. I am always open to using it in as many ways as I can. When I first heard of using it in rice I was all for giving it a try. I have to say I have tried a few different takes on it with various results. When using coconut milk in lieu of water I found at times it made the rice too sticky. I finally decided to try something I thought would work better. It turned out great and is the simplest recipe ever. If you want to impress your guests with minimal effort this can be our little secret :).
I have always enjoyed cooking since I was a child. Some of my fondest childhood memories take place in the kitchen preparing meals first with my mother, and then on my own.
