When I first saw this on the site Keeping up with the Joneses I was instantly interested. I loved Edamame but have yet to really use them in interesting ways. I have tossed them in salads but have been looking to find a way to give them a little boost. I was super excited that it even got my husband to try them and LIKE them which was a true surprise. ๐Ÿ™‚ These would make a great appetizer or snack. They are really simple to make and really delicious.

Ingredients

  • 1 Package frozen Edamame in Shell

  • 1/4 cup Olive Oil

  • 2 cloves minced garlic

  • 1/4 cup Seasoned Bread Crumbs

  • 1/4 cup Grated Parmesan cheese

  • Salt to taste

Directions

  • Steam the edamame according to package directions or use a ziploc bad with a TBS water and make a tiny puncture for steam to escape.
  • Microwave on high for 2 minutes, drain and set aside.
  • Process Olive Oil and garlic in a small food processor or blender till combined.
  • Heat wok (or pan) to medium heat, add Edamame and garlic oil and toss for 2 minutes and remove from heat
  • Add breadcrumbs and Parmesan and toss till well coated, add salt to taste and serve. Enjoy like regular Edamame (discard shells and eat pods).
