Cookies and Cream Cupcakes

My lovie girl was having a pajama/end of the year party at her daycare. She is staying in her current room but almost all of her friends are moving up based on their birthdays. I decided to make a little something to send them off with a smile. My favorite little sous chef was fantastic and really a good help in the process. I love cooking with her and watching her excitement. She was the cutest thing the next day carrying the bag with cupcake filled storage containers waddling down the hall to class under the weight of them.  The only note is that the cakes sunk ever so slightly in the center but with frosting I didn’t really worry about it. They are very deep chocolate in flavor and are very light and moist. One of her class mates called out “These are the best cupcakes in the world. ” That was praise enough for me to know I had to pass these along. You always believe a 3 year old when it comes to cupcakes, they know their stuff. 😉

By the way, if you haven’t heard, I’ll be having an online bake sale here on September 10th to benefit the Pillwillop Therapeutic Farm and Community Counseling of Central CT.  I’m so excited because a fantastic group of bakers have committed to baking something!  If you’re a baker, there is still time to donate a baked good.

Cookies and Cream Cupcakes

Ingredients

  • 1 Cup Sugar

  • 1 Cup Brown Sugar

  • 1 3/4 Cup Flour

  • 3/4 Cup Cocoa Powder

  • 1 1/2 tsp Baking Soda

  • 1 1/2 tsp Baking Powder

  • 1/2 tsp Salt

  • 2 Eggs

  • 1 Cup Milk

  • 1/2 Cup Vegetable Oil

  • 2 tsp Vanilla

  • 1 Cup Boiling Water

  • 3/4 cup crushed Mini Oreos plus 24 for topping

  • 1 Container Vanilla Frosting (Homemade or Store Brought)

Directions

  • Preheat oven 350 degrees. Fill 24 muffin pans with liners.
  • Add dry ingredients into bowl and mix together.
  • Add eggs, milk, oil and vanilla
  • Beat with mixer for about 2 minutes
  • Add boiling water and beat till just combined (batter will be watery)
  • Bake 20-25 minutes (my oven took just about 20 mins) until center bounces back.
  • Crush Mini Oreos and add to frosting.
  • Cool cupcakes and frost, top with Mini Oreo.
