This past week has been insane to put it mildly (more on that later). I decided to share this very simple recipe for all those who are making their way back too. For those who are Greek salad aficionados, no I did not forget the feta cheese. I am not a gal who normally leaves out the cheese
. I only omitted it because the dressing I was using was made with feta cheese and I was afraid it might be too salty combined. If you are using a Greek style vinaigrette (or your favorite dressing) you should add some Feta because it really makes the salad extra special and tasty. This is great for a quick lunch or even dinner.
- 2 chicken breasts
- ¼ cup lemon juice
- oregano (to taste)
- salt (to taste)
- ½ red onion
- Salad greens
- ¾ cup kalamata olives
- 2 medium tomatoes
- Thinly slice the chicken breast.
- Season to taste with oregano
- Pour lemon juice over and toss gently
- Heat a frying pan to medium heat.
- Sear the chicken till cooked through on both sides.
- Thinly slice onions.
- Chop tomatoes into bite size pieces.
- Peel and cube cucumbers.
- Place salad greens on plate and top with onions,olives,tomatoes, cucumbers and chicken.
