Greek Salad

This past week has been insane to put it mildly (more on that later). I decided to share this very simple recipe for all those who are making their way back too. For those who are Greek salad aficionados, no I did not forget the feta cheese. I am not a gal who normally leaves out the cheese :). I only omitted it because the dressing I was using was made with feta cheese and I was afraid it might be too salty combined. If you are using a Greek style vinaigrette (or your favorite dressing) you should add some Feta because it really makes the salad extra special and tasty. This is great for a quick lunch or even dinner.
