As some of you may already know I recently got my hands on a bottle of Chia Seeds. I have wanted to try them out for quite some time, especially for the lovies. I searched high and low and even with my “google ninja” skills I did not find too many exciting options out there.
I got my little wheels turning and then thought about Lemon and Poppy seeds which are a favorite combo for muffins and many other baked goods. Then I thought why not substitute the Poppy for Chia seeds! Ta Da! 🙂 I was originally going to make pancakes but decided to do something I have not made yet, Oatmeal. I opted to use lemon curd instead of zest to replace the need for any sweetener while lending the lemony tartness.
This is a super quick and delicious start to your morning. It is just sweet enough without being cloying and it is packed with a lot of nutritional benefits. I personally always use milk in my oatmeal because I think it adds a creaminess. In this recipe I used one of my favorite milks (Vanilla Coconut) and it was yummy!

- 1 Cup Organic Oats (Quick)
- 1 3/4 Cup Milk (I used Vanilla Coconut)
- 1 Tbs Lemon Curd (or more to taste)
- 1/2 Tbs Chia Seeds
- Bring milk to a boil
- Add Oats and cook one minute (or according to package directions)
- Remove from heat and mix in Lemon Curd till incorporated
- Stir in Chia Seeds and serve immediately.
Hey, I use coconut milk and chia seeds in my oatmeal too! So tasty, I’m sort of obsessed with oatmeal right now. It is a lot healthier that my last obsession: M&M’s and Pretzels! I’ll have to try some lemon in my oatmeal sometime 🙂
