Oatmeal Apple Pie with Dulce de Leche

About a week ago the familia and I went to a nearby apple orchard. My little daughter had so much fun picking her own apples. I went a little crazy with picking and had to think of some ideas to use them all. I played around with a few different ideas and decided to make this oatmeal cookie/apple pie mixture. I feel Dulce de leche can rarely do any wrong so I knew it was a good fit. I hope you enjoy it. Feel free to adjust the sweetness on the filling  to your liking.

Oatmeal Apple Pie with Dulce de Leche

Serves: 10
  • **Filling**
  • 6 medium apples
  • 3 tbs light brown sugar
  • 2 tsp white sugar
  • 2 tbs Cinnamon (or to desired effect)
  • **Crust**
  • 1 cup light brown sugar
  • 2 cups all purpose flour
  • 2/8 tsp salt
  • 2/4 tsp baking soda
  • 2 cup rolled oats
  • 1 cup butter softened
  • **Topping**
  • ½ cup Dulce de leche
  • ¼ cup light cream
  1. Directions
  2. Preheat oven to 350
  3. Slice apples into thin slices
  4. Toss apples with cinnamon and sugars and set aside
  5. Mix flour, oats, baking soda, flour and brown sugar
  6. Add butter and work into dry mixture
  7. Press it into your 9 in pie plate
  8. Add apple mixture
  9. Top with remaining topping
  10. Bake 25- 30 mins
  11. While baking simmer dulce de leche with cream till syrupy
  12. Drizzle over finished pie
