Oatmeal Apple Pie with Dulce de Leche

About a week ago the familia and I went to a nearby apple orchard. My little daughter had so much fun picking her own apples. I went a little crazy with picking and had to think of some ideas to use them all. I played around with a few different ideas and decided to make this oatmeal cookie/apple pie mixture. I feel Dulce de leche can rarely do any wrong so I knew it was a good fit. I hope you enjoy it. Feel free to adjust the sweetness on the fillingĀ  to your liking.

Oatmeal Apple Pie with Dulce de Leche

Ingredients

  • Filling
  • 6 medium apples

  • 3 tbs light brown sugar

  • 2 tsp white sugar

  • 2 tbs Cinnamon (or to desired effect)

  • Crust
  • 1 cup light brown sugar

  • 2 cups all purpose flour

  • 2/8 tsp salt

  • 2/4 tsp baking soda

  • 2 cup rolled oats

  • 1 cup butter softened

  • Topping
  • 1/2 cup Dulce de leche

  • 1/4 cup light cream

Directions

  • Preheat oven to 350
  • Slice apples into thin slices
  • Toss apples with cinnamon and sugars and set aside
  • Mix flour, oats, baking soda, flour and brown sugar
  • Add butter and work into dry mixture
  • Press it into your 9 in pie plate
  • Add apple mixture
  • Top with remaining topping
  • Bake 25- 30 mins
  • While baking simmer dulce de leche with cream till syrupy
  • Drizzle over finished pie
