Mango Coconut Oatmeal Cookies

This recipe came from a deep love of Mango and wanting to find a way to work it into a cookie mixture. I found a great cookie recipe base and added my own little additions. This is a little bit of a fussy recipe but the result are extremely fluffy cake like cookies. The mango and coconut are always a magical combination. I used sliced dried mango from Whole Foods bulk section and they cooked to a perfect tender consistency. These will add a little tropical feel to these chilly December days.

Mango Coconut Oatmeal Cookies

Serves: 60
  • 1 cup butter
  • 1 cup brown sugar, firmly packed
  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup rolled oats, quick
  • 2 cups coconut
  • 1½ cup diced dried mango slices
  1. Cream butter and add sugar slowly and whip till fluffy
  2. Add eggs and vanilla and beat well
  3. Sift flour, baking soda and baking powder (Stir in) in four parts
  4. Mix in Oats,Coconut and Mango
  5. Drop onto ungreased cookie sheet by teaspoonfuls
  6. Bake at 375 for 12-15 mins or until golden brown

Thank you so much! They were really good. If you have a Whole Foods or I usually get mine in bulk at BJ’s or you can sometimes even find a small bag in CVS, just make sure it is Philippines Mango to get the right taste. Have fun! :)

what type of coconut is this? powdered, dessicated…

Hi there!

It was regular shredded coconut. You can use sweetened or unsweetened depending on your preference. :)
