This recipe came from a deep love of Mango and wanting to find a way to work it into a cookie mixture. I found a great cookie recipe base and added my own little additions. This is a little bit of a fussy recipe but the result are extremely fluffy cake like cookies. The mango and coconut are always a magical combination. I used sliced dried mango from Whole Foods bulk section and they cooked to a perfect tender consistency. These will add a little tropical feel to these chilly December days.
I have always enjoyed cooking since I was a child. Some of my fondest childhood memories take place in the kitchen preparing meals first with my mother, and then on my own.

Thank you so much! They were really good. If you have a Whole Foods or I usually get mine in bulk at BJ’s or you can sometimes even find a small bag in CVS, just make sure it is Philippines Mango to get the right taste. Have fun! ๐
