Mini Chocolate Chip Muffins

I have been on quite a baking fiend these last number of weeks. I try to bake at least once a month to stock the freezer for the lovies with breakfast treats like muffins, waffles and pancakes to make mornings easier and healthy at the same time. These tasty little cuties were actually a little edible thank you for the daycare staff  where my little ones attend. They are really easy to make and are just sweet enough to feel like a treat but not too naughty for you, well they are  mini at least :).

Ingredients

  • 3 cup flour

  • 1 cup sugar

  • 1 1/2 tbsp baking powder

  • 1/2 tsp salt

  • 1 1/2 cup mini or regular-sized chocolate chips

  • 1/2 cup butter, melted and cooled

  • 1/4 cup vegetable or canola oil

  • 3 eggs

  • 1 1/2 cup milk

  • 2 tsp vanilla

Directions

  • Pre heat oven 375 degrees
  • Whisk flour, baking powder, salt and sugar until combined. Mix in chocolate chips
  • In another bowl combine the remaining ingredients until completely combined
  • Pour wet ingredients into the dry and mix until thoroughly incorporated (do not over mix)
  • Pour into lined or greased muffin tin and bake at 375 for 12-14 minutes for mini muffins (15-18 mins for regular sized)

    Good and quick recipe! Will definetly make again.

  3. I made these they tasted amazing! I got 93 mini muffins from one batch! That was with the $5-6 pan from Walmart at 9:30 and they are perfect! Love these and will definitely make again.
