Baked Jalapeno Poppers

I am not even going to pretend that I am a Football fan. It is just not my thing. I will hang waiting for the commercials if I am around a group of fans but the game holds no real interest for me. What always interests me of course is cooking for the crowd, large or small. I wanted to share a recipe for a tried and true party favorite. However, I wanted find a slightly healthier way to make it. Now don’t get me wrong I enjoy they deep fried lovely version as much as anyone. I have to say I really enjoyed this version very much and didn’t miss the deep fried aspect. You can feel free to play around with seasoning for the cream cheese part as I may later. Also I used the Italian seasoned Panko crumbs but I may try the new Chipotle flavor next time. Give these a try and I am sure they will disappear.

Ingredients

  • 4 Fresh Jalapenos

  • 3/4 cup Cream Cheese

  • 1/3 cup your choice shredded cheese blend (I used a Mexican blend)

  • Panko Breadcrumbs (I used Italian spiced ones)

Directions

  • Mix the cheeses together in a small bowl and set aside
  • Wash and halve the jalapenos (please wear gloves when handling)
  • De seed the jalapenos (the heat is in the membrane and seeds, you may wish to leave some of the membrane if you prefer heat)
  • Spoon in enough of cheese mixture to evenly fill each half
  • Press each jalapeno into the Panko breadcrumbs till covered
  • Spray lightly on tops with cooking spray
  • Bake at 350 degrees for 25-30 minutes

  2. These are right up my alley. I am not a football fan, but if these were at a party I would watch just about anything!
