It has been years since I took a chance on a Papaya. I have had so many disappointments, I just didn’t want to give myself false hope anymore. I was convinced I would never taste a lovely Papaya until the hubby and I could afford a second honeymoon somewhere warm again. However, the other day I saw a suspiciously healthy looking Papaya at my local grocery store.

I picked it up. I put it down. I picked it up again and kept looking. I decided to give it a chance. It wasn’t until later the next day that I figured out what I wanted to use it for and decided to give an added tropical feel to my mango salsa. Lime juice normally brings out the flavor of the Papaya and so it worked really well in this mixture. It is great with chips but could also be a great on chicken or another meat as well.

Ingredients

  • 1/2 a large Papaya

  • 1/2 onion (your preference,red, Spanish etc)

  • 4 Vine ripe tomatoes

  • 1/2 cup chopped Cilantro

  • 1 small Mango diced

  • Juice of 1 lime

Directions

  • Chop all the ingredients
  • Mix together in a bowl.
  • Juice lime and add to bowl, mix gently
  • Allow to marry for at least a half hour and enjoy

Notes

  • *You can adjust the amount to your liking on the ingredients used as well as lime. You can also add a jalapeno for added spice.

  2. Woah! Need to make this, love me some pico di gallo and this fruity one would be soooo good on a chicken taco!
